1 cup EarthFresh CarismaTM potatoes, cut into even pieces
2 Tbsp. (30 mL) olive oil, divided
1 lb. skinless, boneless chicken breast, thinly sliced
2 cups (500 mL) tomato sauce
3 Tbsp. (45 mL) balsamic vinegar
2 Tbsp. (30 mL) honey
1 Tbsp. (15 mL) smoked paprika
1 tsp. (5 mL) salt
1 tsp. (5 mL) pepper
1 small red onion, sliced in wedges
1 red pepper, sliced
1 yellow pepper, sliced
2 cloves garlic, chopped
4 cups baby spinach

Wash the potatoes leaving their skins on. Cut potatoes into small even pieces and place potatoes into hot (not boiling) water. Bring to a boil and cook until fork tender.
Once cooked, strain potatoes and place into a medium bowl, set aside.
Add 1 tablespoon of olive oil to a pan over medium heat and add chicken. Sautee for approximately six minutes – until cooked through. Add the tomato sauce, balsamic vinegar, honey, smoked paprika, salt and pepper to the pan. Stir well to incorporate all the ingredients and reduce to a simmer to cook for approximately twenty minutes –stir frequently.
While the chicken and sauce are cooking, add remaining tablespoon of olive oil to another pan over medium heat. Add the onions, peppers and garlic, sauté for approximately three minutes – until vegetables are soft. Set aside until the chicken and sauce are ready.
To assemble your bowls, divide your spinach amongst four small serving bowls and add the potatoes, the barbeque chicken, the peppers, onions and garlic.
