5 cups EarthFresh CarismaTM potatoes – cut into even pieces
2 eggs, lightly beaten
½ (125 mL) cup sugar
¼ cup (60 mL) butter, melted
¼ cup (60 mL) buttermilk
1 tsp (5 mL) vanilla
1 tsp (5 mL) allspice
1 tsp (5 mL) baking soda
1 tsp (5 mL) baking powder
1 tsp (5 mL) salt
1 tsp (5 mL) cinnamon
¼ cup (60 mL) chopped walnuts
2 cup (500 mL) flour
Directions:
Preheat oven to 350º F (170º C).
Place the potatoes into a large pot and cover with cold, salted water. Bring to a boil, reduce heat to medium-low, cover and simmer until tender, roughly 15 minutes. Potatoes should be tender when pierced with a fork. Drain and transfer the potatoes to bowl and lightly mash.
In a separate large bowl, whisk the eggs, sugar, butter, buttermilk, vanilla, allspice, baking soda, baking powder salt, cinnamon, potatoes and chopped walnuts. Stir to incorporate all ingredients. Add flour half cup at at time and stir to incorporate.
Line muffin tins with large sized muffin liners and fill each line ¾ full. Transfer muffin tins to the oven and bake for 25 minutes. Remove from oven and cool completely.
