- 3 cups EarthFresh CarismaTM potatoes – cut into even pieces
- 2 Tbsp (30 mL) butter
- 2 Tbsp (30 mL) half and half cream (10% MF)
- 4 artichoke hearts- from a jar
- 1 large roasted red pepper – from a jar
- Fresh parsley – for garnish
- Cherry tomatoes – for garnish
Wash and peel the potatoes. Cut potatoes into small even pieces and place into hot (not boiling) water. Bring to a boil and cook until fork tender. Once cooked, strain potatoes and set aside to cool.
When potatoes have cooled (approximately 15 – 20 minutes), lightly mash and add the potatoes to a blender. Add the butter, cream, artichokes and roasted red pepper. Blend until well incorporated and the mixture has a smooth texture. Transfer the mixture into a container and allow to cool.
Using your favourite cracker, spread the potato mixture and garnish with fresh parsley and sliced cherry tomato.
The spread can be stored in the fridge for up to three days and makes a great vegetable dip!
